What is Konjac or in German (Konjak)?
Konjac is a root and part of the devil's tongue. The devil's tongue is a bulbous plant and originally comes from Southeast Asia. It arises first from a tuber underground and can then grow up to 2m. The root of the devil's tongue, i.e. the konjac root, can be up to 25cm thick. Konjac consists of up to 60% from glucomannan, up to 25% from starch, up to 5% from cellulose, up to 10% from fat, up to 5% from sugar and up to 5% from minerals. The 5% minerals contain vitamins A, E, D, B1, B2, B6 and B12 as well as vitamin C.
Konjac in food?
Probably the best known konjac food is konjac noodles. These are used from the konjak flour. The root is pulverized and ground. The advantages are apparent. Konjac is rich in fiber and vitamins, making it a very healthy alternative to traditional noodles. In addition, researchers at Mahidol University in Bangkok discovered a connection between the consumption of konjac and ghrelin. Ghrelin is a hormone that signals appetite in the body. The lower the ghrelin level, the less hungry you feel. According to the researchers from Bangkok, konjac could lower ghrelin levels and thus prevent binge eating, for example. Now what is a konjac sponge?
The typical konjac sponge is made from the fibers of the konjac root. It's very stiff and dry. Airtight packed and completely odorless. As soon as it comes into contact with water, it becomes incredibly soft and comfortable.
